Experience fine-dining at Leeward Community College’s award-winning learning restaurant, The Pearl.

Leeward CC Culinary Arts Department is proud to welcome back to campus alumnus Shaden Sato, Chef at the Halekulani. Chef Sato’s 5‑course gourmet menu will be the focus of the Culinary Special Events (CULN 269) class, where students participate in interactive management teams to plan, market, organize and execute this special dinner.

  • Scallop Sashimi with Avocado Mousse, Preserved Lemon Kosho, Ho Farms’ Tomatoes and Puff Grains
  • Katsuobushi Cured Ahi Crudo with Sweetland Farms Goat Cheese, Roasted Beets, Beet Caviar and Chive Vinaigrette
  • Big Island Braised Abalone and Hearts of Palm Gohan Risotto
  • Pipikaula Short Rib Ragout with Taro Gnocchi, Roasted Kabocha Puree and Lū‘au Sauce
  • Furikake Pop Corn Ice Cream with Arare Panna Cotta

Master Sommelier Chuck Furuya, an expert in pairing wines with Pacific Rim cuisine, has hand-selected distinctive wines to pair with Chef Sato’s multi-course entrees.

Guests will not only tantalize their pallets, they will enjoy stunning views of Pearl Harbor and experience the fine dining presentation and guest service of the students.

Chef Shaden Sato

As Banquet/Event Chef at Halekulani, Shaden Sato oversees all aspects of the Banquet department’s cuisine. Most recently, he created menus for special events at Halekulani such as the Hawaii International Film Festival’s Oscar Night Gala Dinner and participated in the Joy of Sake and Hawaii Food & Wine Festival.

Chef Sato started cooking at 15 years old and worked at several food establishments from that age. In 2000, he enrolled in Leeward Community College’s Culinary Arts Program. While attending Leeward CC, he worked part time as a cook at Halekulani and was mentored by Executive Chef Darryl Fujita. Chef Sato earned his culinary degree from Leeward CC in 2002 and joined Ruth’s Chris as pantry cook. He continued his culinary progress and later became their head butcher.

In 2017, Chef Sato was promoted from Sous Chef to Banquet/Event Chef at Halekulani. To this day, he has been involved with Leeward CC’s Culinary Arts Program and currently serves on the Advisory Board.
